
Not all wines are alike, whether they be Rosé, Red or White wines.
The Cuvée Jeanne of the Domaine Castel des Maures is part of the “Rosé d’exception” with regards to the care taken of the vine in order to obtain a healthy grape which reaches full and perfect maturation, as well as with regards to the wine-making process, which is carried out in small quantities, and is carefully monitored throughout every stage of the “fermentation à froid” process in order to ensure that the maximum of savour is extracted from the grape.
We voluntarily limit our yield to around 45 hectolitres per hectare in order to allow the vine to give a maximal amount of concentration from to the richness of the soil and the maturity of the bunch.
The growing is done on dregs until January; the Rosés are then filtered during the month of January and bottled between February and March.

The Cuvée Jeanne has a salmon-pink colour:
it is a subtle wine.
At first taste, one will observe its clear and limpid dress;
this dry wine is fruity, long in mouth and delicate at the end. Red fruit dominate the feeling. This Rosé is the perfect compliment to fish, salads or grilled meats.

Provence’s red wines are understandably gaining notoriety.
The Cuvée Antoine of the Domaine Castel des Maures has the distinctive structure of the first-class Provence red wines.
The unique surroundings of this parcel of land allows it to benefit from the softness that the proximity of the sea offers, and the exposure on the slopes situated along the Massif des Maures, which gives it power; both characteristic features which grants the wine a real Provencal distinctiveness.
An “assemblage” of “vieux Mourvèdre and Syrah with a limited yield of 40 hectolitres per hectare, in order to draw the quintessence of this variety of vine.
At the Domaine de Castel des Maures, our saying is: “to make good wine, you need to start with a good grape”, which is something for which we strive at all stages:
- At the level of the vine, in order to obtain a perfectly matured grape
- at the level of the vintage, which is carried out at night time in order for the grapes to reach the cellar without having suffered from the heat of daytime.
After the grape is picked off the bunch, the wine-making process is started off by macerating the grapes in a stainless steel vessel. We then pay attention to every stage of the alcoholic fermentation, carrying out daily pumping-overs and a manual “pigeage”, in order to extract a maximum of tannins and color from the grape.
After approximately three weeks the alcoholic fermentation is finished: we press the contents of the vessel and then begin the second part of the wine-making process, which lasts until June approximately, when the wine is bottled.
